Boulevardier

- 1 oz Campari
- 1 oz sweet vermouth
- 1 orange twist, for garnish
- Ice, for stirring
Instructions

- Stir for 20-30 seconds until chilled.
- Strain into a rocks glass over a large ice cube, or serve up in a coupe.
- Express an orange twist over the surface and drop it in.
Tips
- Rye whiskey makes it drier and spicier than bourbon.
- Bumping the bourbon to 2 oz gives a boozier, whiskey-forward drink.
Dark 'n' Stormy
Ingredients
- 2 oz dark rum
- 0.5 oz fresh lime juice
- 4 oz ginger beer
- 1 lime wedge, for garnish
- Ice cubes
Instructions
- Fill a highball glass with ice and add the lime juice.
- Pour in the ginger beer.
- Slowly float the dark rum on top so it layers over the ginger beer.
- Garnish with a lime wedge; stir before drinking if you prefer it mixed.
Tips
- A dark, molasses-rich rum gives the signature colour and layered look.
- Leave out the lime for the most traditional two-ingredient version.
Penicillin
Ingredients
- 2 oz blended scotch
- 0.75 oz fresh lemon juice
- 0.75 oz honey-ginger syrup
- 0.25 oz Islay single malt scotch, for floating
- 1 piece candied ginger, for garnish
- Ice, for shaking and serving
Instructions
- Shake the blended scotch, lemon juice and honey-ginger syrup with ice for about 12 seconds.
- Strain into a rocks glass over fresh ice, ideally one large cube.
- Gently float the Islay single malt over the top.
- Garnish with a piece of candied ginger.
Tips
- Make honey-ginger syrup by warming equal parts honey and water with sliced fresh ginger, then straining and cooling.
- The Islay float adds smoke and aroma; skip it for a mellower, less peaty drink.
